Ingredients

1/4 cup melted butter
3 eggs
1 cup flour
1 teaspoon baking powder
2 pkgs. (10 oz. each) frozen chopped spinach, thawed and drained
12 ounces Monterey Jack cheese, grated
8 ounces sour cream
1 pkg. dry ranch salad dressing mix

Directions:

Beat eggs. Add flour, baking powder, salad dressing mix and butter; add grated cheese and spinach. Spread evenly into a 9x13 inch pan coated with cooking spray. Bake for 30 minutes at 350 F. Cool for at least 30 minutes, then cut into squares. Add dollop of sour cream to top of each square (optional).
